Mexican Green Guacamole Recipe
Ingredients:
Serves 8 people.
- 4 green tomatoes or tomatillos
- 2 or 3 ajis chilis or serrano chilis
- 2 large avocados
- a pinch of salt
- 1 tablespoon of chopped cilantro
- ¼ of a medium-sized onion (chopped)
Preparation:
Peel the green tomatoes and roast them with the chiles on a griddle or skillet over medium or preferably low heat, without burning them. Be sure to shaken once in a while.
Grind the tomatoes and chiles in the molcajete (brownish as they turned after roasting them), add the peeled avocados and crush them too. If you do not have a molcajete you may use a blender on low speed mixing all of the ingredients. If you desire it to be very watery mix very well in the blender but if you want it thicker blend for a short period of time.
The flavors change depending on the way of preparation.
This is fast and easy but if preferred, set apart the avocados and crush them with a fork obtaining a soft paste as indicated on the above guacamole recipe. Do not forget to add some drops or half the juice of a lemon.
Mix then well with the other ingredients to combine flavors, add salt, minced onion and cilantro to taste. Serve guacamole with tacos, or meat. This is an extraordinary recipe!
